Leftover mash doesn't have to mean bubble and squeak (again). These mashed potato toasties use your toastie maker to turn cold leftovers into something genuinely good — crispy on the outside, molten and cheesy in the middle, with bacon running through it. It's the kind of zero-fuss lunch that makes you feel clever for thinking of it. Technically a hack, practically a weekday staple.

INGREDIENTS:

  • 4–5 Tbsp leftover mashed potato
  • 1 Tbsp chopped cooked bacon
  • 1 Tbsp grated cheeseBlack pepper

INSTRUCTIONS:

  1. Preheat your toastie maker.
  2. Spoon about 2 Tbsp of mashed potato onto one side of the toastie maker and use a fork to spread it evenly to the edges, with no gaps. Add a little extra mash if needed — this is what holds the toastie together.
  3. Scatter over the bacon, grated cheese, and a pinch of black pepper.
  4. Top with the remaining mashed potato and press the edges together with a fork to seal in the filling.
  5. Cook for 6–8 minutes, until golden, crispy, and heated through.
