You can make this recipe a few days ahead of Christmas, to lighten the load on the actual day. Have it sliced on your Christmas morning croissant with tomato and cheese, or add it as a cold slice to your summer Christmas table, the perfect addition to your showstopping salads and sides.

INGREDIENTS:

  • 1 small ham, (brined/precooked)
  • 20 cloves, optional
GLAZE:
  • ⅓ cup orange marmalade
  • 1 Tbsp brown sugar
  • 2 Tbsp wholegrain mustard, or Dijon
  • 4 Tbsp orange juice, or water

INSTRUCTIONS:

  1. Remove the ham from the fridge and bring to room temperature (about 1 hour).
  2. Preheat the oven to 160°C (fan).
  3. Stir all the ingredients for the glaze together in a small bowl.
  4. Carefully remove the tougher outer skin by piercing with a sharp knife to begin with, then pulling it off, keeping the fat layer intact. Score the fat in a criss-cross pattern.
  5. Place the ham into a snug baking tray, then spoon over half of the glaze, covering as much of the surface as you can. Push the cloves into the scored cross points and cook in the middle of the oven for 40-45 minutes. Baste every 10 minutes, using the remaining glaze.
  6. When golden brown and sticky, remove from the oven and rest on a chopping board for 30 minutes before slicing. Keeps in an airtight container in the fridge for 1-2 weeks.
