Gremolata usually means parsley doing quiet work on the side of a braise. This one pushes in mint and basil, loosens them with good olive oil, and finishes with sumac for a sour edge that cuts through the fat. It goes under the lamb and over it, so every slice picks some up. The rolled lamb shoulder is the fast part: seared in a pan, roasted under a foil tent, then uncovered at the end to brown. A low-effort centrepiece and a Sunday roast that doesn't eat your Sunday.
