This vibrant green sauce is a great one to keep on hand in the fridge, as it's so versatile, includes healthy fats and gives dishes a zesty lift thanks to the garlic, lemon and herbs.

This green goddess dressing pairs great with roast vegetables, green salads, or even heaped on top of chickpeas or your favourite legume.

INGREDIENTS:

  • 100g ripe avocado 
  • 1 Tbsp Natural Greek yogurt 
  • Small handful chopped fresh herbs - you might like to try basil, parsley, and dill. 
  • ½ Tbsp lemon juice
  • 1 small clove garlic 
  • Salt 
  • Pepper
  • Water (Optional)

INSTRUCTIONS:

  1. Place all the ingredients in a blender and blitz until smooth. Add water to thin out the dressing if needed.

Store in an airtight container in the fridge for up to 5 days.
