A quick mix of cream cheese, chopped spinach, and diced stalks gets packed into the caps, topped with a melted cheese crust, and air-fried until golden and bubbling in under 15 minutes. They work as a side, a starter, or an honest excuse to eat mushrooms for dinner. The kind of low-effort, high-reward recipe that makes you wonder why you'd ever roast a whole tray of veg instead.

INGREDIENTS: 

  • 6–8 medium mushrooms
  • 100g cream cheese, softened
  • 30g spinach, finely chopped
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • ½ cup (approx. 50g) grated cheese

INSTRUCTIONS:

  1. Remove the stalks from the mushrooms and finely dice them. Set the caps aside.
  2. In a bowl, combine the diced stalks, cream cheese, spinach, onion powder, and a good pinch of salt and pepper. Mix until well combined.
  3. Spoon the filling generously into each mushroom cap.
  4. Spread the grated cheese on a shallow plate. Press the filled side of each mushroom into the cheese so it sticks to the top.
  5. Place the mushrooms in your air fryer basket, cheese-side up, and cook at 180°C for 10–12 minutes, until the cheese is golden and bubbling.
