This Broccoli Falafel recipe is a no-waste win! You can use the whole head of broccoli, stalk and all, so nothing goes to waste, while enjoying a colourful meal that's nutritious, delicious and satisfying. The falafel can be baked in the oven or cooked in the air fryer, making for a simple weeknight meal.

We've paired our green falafel delights with creamy garlic avocado yogurt and fresh crunchy veggies like radish and cucumber for pita pockets that pack a flavourful punch! Capsicum, thinly sliced red onion or grated carrot would also be delicious additions.

You could also make this recipe with wraps or even serve the falafel alongside rice and salad.

It's a simple yet satisfying vegetarian dinner recipe, perfect for using your Wonky greens with gusto!

INGREDIENTS:

  • 1 head broccoli
  • 1 tin (400g) chickpeas, drained and rinsed
  • 1 egg
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp baking powder
  • 2 Tbsp dried parsley
  • 2 cloves garlic, crushed
  • 1 small brown onion (or ½ large brown onion), diced
  • Salt and pepper to taste
  • 2 Tbsp sesame seeds
  • 6 pita breads

  • Hummus - your favourite store bought variety (or you could try our Carrot Hummus recipe)
  • Sliced radish
  • Sliced cucumber
  • Lettuce

GARLIC AVOCADO YOGURT:

  • ½ cup yogurt
  • Juice of ½ lemon
  • 1 clove garlic
  • 1 small ripe avocado (or ½ large ripe avocado)
  • Salt and pepper to taste

INSTRUCTIONS:

Prepare the Falafel:

  1. Preheat the oven to 210°C
  2. Cut the broccoli, including the stalk, into smaller pieces.
  3. Mince the garlic and dice the onion.
  4. Place the broccoli into a blender or food processor and blitz for about 30 seconds until it resembles broccoli rice. 
  5. Add chickpeas, dried parsley, cumin, coriander, baking powder, egg, onion, salt, and pepper. Blitz in short bursts until the chickpeas are split and the mixture is combined but not too mushy.
  6. Stir in the sesame seeds.
  7. Using your hands, roll the mixture into 12 even-sized falafel balls. Place them on a lined baking tray and drizzle with olive oil.
  8. Bake in the oven for 20-25 minutes (or you can cook in the air fryer at 200°C for 15-17 minutes) until crispy on the outside.

Make the Garlic Avocado Yogurt: Blend yogurt, lemon juice, avocado, salt, and pepper until smooth. Set aside.

Assemble the Pitas: Heat the pita breads according to the package instructions. Spread hummus inside each pita, then add two falafel, sliced cucumber, radish, lettuce, and a drizzle of avocado yogurt dressing.
