INGREDIENTS:

  • 8 pitted dates, chopped
  • 2 cups celery, thinly sliced
  • 2 Tbsp celery leaves
  • 1 ½ navel oranges or 2 mandarins (use half for the dressing)
  • 1 apple (red or green), cut into matchsticks
  • ¼ cup pistachios, chopped
  • Salt & pepper
DRESSING:
  • 2 Tbsp olive oil
  • Juice of ½ lemon
  • Juice of ½ orange
  • Salt & pepper

INSTRUCTIONS:

  1. Prepare the fruit and vegetables: chop the dates, slice the celery, cut the apple into matchsticks, and segment the orange.
  2. Make the dressing: in a large bowl, whisk together the olive oil, lemon juice, and orange juice. Season with salt and pepper.
  3. Stir in the chopped dates to naturally sweeten the dressing.
  4. Add the celery, apple, orange segments, pistachios, and celery leaves. Season again with salt and pepper, toss well, and serve.
