This Apple, Walnut & Cos Salad earns its place next to whatever you put it beside. Crisp cos and diced celery get coated in a sharp caper mayo (sour cream, mayonnaise and mashed capers with a splash of their brine), then finished with thin slices of raw apple, toasted walnuts and a generous zesting of parmesan. The apple goes in at the last minute so it stays crisp and just-sweet against the salty dressing. A fast, no-cook way through a handful of Wonky Box odds and ends, and the kind of side that gets eaten before the main event does.

INGREDIENTS:

  • 40g walnuts
  • 1 cos lettuce
  • 1-2 celery stalks
  • 2 tsp capers, plus brine
  • 2 Tbsp sour cream
  • 2 Tbsp mayonnaise
  • Sea salt
  • Freshly ground black pepper
  • 1 apple
  • Parmesan, to serve

INSTRUCTIONS:

  1. Toast the walnuts with a pinch of salt in a dry pan over medium to low heat.
  2. Roughly chop the cos lettuce, then wash and spin it (or pat dry with a clean tea towel) so it's completely dry, and place into a large bowl. Slice the celery in half lengthways, dice into small pieces and toss through the lettuce.
  3. In a small bowl, mash the capers with about 1 Tbsp of their brine. Mix in the sour cream and mayonnaise with a good pinch of sea salt and a good grind of black pepper. Toss through the salad so all the lettuce is coated.
  4. Just before serving, cut the apple into quarters with the skin on, remove the core, and finely slice each quarter on a mandoline (or by hand) into 2mm slices.
  5. Gently toss the apple through the salad with the toasted walnuts, and serve with a generous zesting of parmesan.
