This recipe uses the whole of the orange for the sauce, creating a burst of citrusy flavour; it’s a delicious low waste easy mid-week meal to please all the family.

INGREDIENTS

  • 1 block firm tofu
  • 2 tablespoons corn flour

ZERO WASTE ORANGE SAUCE:

  • 1 navel orange
  • 200ml water
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • ¼ cup brown sugar
  • 3 tablespoons soy sauce
  • ½ tablespoon sesame oil
  • 1 tsp corn flour
  • 1 tsp water
  • 1 kohlrabi
  • 1 bunch Broccolini

INSTRUCTIONS

  1. Open the tofu and place it on a plate with two more plates on top. This will press out the excess water. Set aside.
  2. Slice the kohlrabi into long, skinny pieces. The skin and leaves are edible.
  3. Place the whole orange in a pot and cover it with water. Boil for 15 minutes to reduce bitterness. Remove the orange from the pot. Cut it into quarters. Place the orange and 100ml of water into a blender and blitz until smooth.
  4. In a bowl, combine the blitzed orange, minced ginger, minced garlic, brown sugar, soy sauce, sesame oil, and 100ml of water. Mix until combined.
  5. In a small bowl, mix together 1 tsp of corn flour and 1 tsp of water until smooth. Set aside.
  6. Pour the sauce mixture into a pan or pot and cook on low heat for 7-8 minutes to reduce slightly, stirring often. Add the corn flour mixture and cook for an additional 2 minutes. Remove from the heat and set aside.
  7. Slice the tofu into cubes. Season with salt and pepper and drizzle with oil. Scatter 2 tablespoons of corn flour over the tofu and toss to coat, giving it a crispy texture when cooked.
  8. Heat a large frying pan with sesame oil, add in the tofu, and cook until golden brown on each side. Remove from the pan. Add the sliced kohlrabi to the pan and sauté for 5 minutes. Add the broccolini and tofu back into the pan. Pour in the sauce and cook for 2-3 minutes. Season with salt and pepper.
  9. Serve with rice or noodles and sprinkle toasted sesame seeds on top.
  10. You can substitute chicken for tofu and use any vegetables instead of kohlrabi and broccolini.
