For an impressive but easy summer salad, look no further than this Feta and Watermelon salad. The tangy feta paired with fresh cucumber and rocket makes it the perfect balance of creamy, sweet, and salty. Delicious finished with a hint of fresh mint!

INGREDIENTS:

Salad:
  • ½ watermelon
  • ½ cucumber 
  • 100g feta
  • Rocket
  • Fresh mint leaves, thinly sliced
Dressing:
  • Juice of one lemon
  • 2 Tbsp Olive Oil
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. In a small bowl or jar, combine dressing ingredients. Set aside.
  2. Carefully cut the watermelon, cucumber and feta into cubes of similar size.
  3. Arrange rocket onto a large plate or platter, then layer watermelon, cucumber and feta on top.
  4. Give the dressing a good mix and drizzle onto salad. Garnish with fresh mint if desired and a final shake of salt and pepper.
