Start your morning with some spice with this quick and flavourful greens and eggs recipe. A perfect breakfast in under 10 minutes!

Ingredients

  • Half bunch of broccolini
  • Half a bunch of asparagus
  • 2 handfuls of spinach
  • 1 clove of garlic, crushed
  • 1–2 tsp of chilli oil, depending on how spicy you like it
  • 40g of feta cheese
  • 2 eggs
  • 1 tablespoon of sliced almonds

Instructions

  1. Cut the broccolini or broccoli into small pieces. Remove the woody ends from the asparagus.
  2. Heat a large pan over medium heat with olive oil. Add the crushed garlic, asparagus, and broccolini. Sauté for 5-5 minutes.
  3. Turn off the heat and add the spinach, mixing it through.
  4. Drizzle the chilli oil over the mixture. In another pan, fry two eggs.
  5. To assemble, divide the mixture between two bowls, sprinkle feta cheese and almonds on top, and place the two fried eggs on top.
