Whether it's pasta night or you just want a fresh and handy sauce to keep in the fridge, this Roasted Tomato Pasta Sauce is de'vine'!

Roasting tomatoes for a pasta sauce is a total game-changer. Cooking them this way brings out their natural sweetness and gives them a smoky, rich flavour. Plus, it thickens the sauce so it sticks to your pasta perfectly. This is a sauce that tastes like you've spent hours perfecting, but really the tomatoes themselves do all the work while you prepare the rest of the meal.

But this sauce isn't just for pasta! It's great as a base for shakshuka, spooned over grilled chicken or fish, or spread on pizza for a flavour boost. You can even use it as a dip for crusty bread or mix it into grains like quinoa or farro for a tasty side dish.

Make this tomato sauce as part of your weekly meal prep, to celebrate when tomatoes are in season!

INGREDIENTS:

  • 6-8 loose truss tomatoes (or whatever type you've got in the fruit bowl!)
  • 1 onion
  • 1 whole garlic bulb
  • 1 Tbsp Mixed Italian herbs
  • Salt & pepper
  • 2 Tbsp olive oil

INSTRUCTIONS:

  1. Preheat the oven to 200°C
  2. Wash then chop the tomatoes in half.
  3. Chop the onion into quarters and the top off the garlic bulb.
  4. Add the prepared vegetables to a roasting tray and season with olive oil, salt & pepper, and Italian herbs.
  5. Roast for 40 minutes or until the tomatoes are softened and juicy.
  6. Once cooked, pour the vegetables into a food processor or blender and blitz together with the juices in the bottom of the baking tray until a smooth and creamy sauce forms.
  7. Store this sauce in a jar in the fridge for up to a week or enjoy right away with your favourite pasta!
