When the post-holiday fridge is groaning, this is what you make. These quesadillas turn leftover potatoes, Christmas ham and any odd veg into something crispy, cheesy and actually exciting. No rules here - just chop, toast, and melt your way to a no-waste lunch or snack. Perfect for that in-between time when cooking ambition is low, but cravings are high.

INGREDIENTS:

  • Leftover cooked potatoes
  • Leftover green beans (or any cooked greens)
  • Leftover Christmas ham (or any cooked meat)
  • 1 onion
  • Grated cheese (cheddar or similar)
  • Tortilla wraps
  • Oil, for cooking
  • Mayonnaise, to serve (optional)

INSTRUCTIONS:

  1. Chop the cooked potatoes, green beans, onion, and ham into small, bite-sized pieces.
  2. Heat a large frying pan over medium heat with a little oil.
  3. Add the onion and potatoes. Cook for a few minutes, stirring occasionally, until softened and starting to turn golden.
  4. Add the ham and green beans (or other leftovers) and cook for another 1–2 minutes to heat through. Remove from the pan and set aside.
  5. Return the pan to the heat. Place a tortilla wrap in the pan and lightly toast on one side.
  6. Flip the wrap, sprinkle grated cheese over one half, and spoon some of the potato mixture on top.
  7. Fold the wrap over to close, pressing gently with a spatula.
  8. Cook until the underside is golden and the cheese is melting, then flip and toast the other side until crisp.
  9. Repeat with the remaining wraps and filling.
  10. Slice each quesadilla into thirds and serve warm with mayo on the side, if using.
