Whip up a speedy Radish-Kumara Toast for a tasty lunch or satisfying snack! Ready in 20 mins, it's perfect for a quick and delicious bite. If you don't have these toppers, don't fret! There are heaps of combinations that would work. Our favourites are: 

  • Avocado and Cherry Tomatoes
  • Hummus & Roasted Capsicum
  • Grilled Zucchini and Cherry Tomatoes:
  • Steamed Asparagus and Lemon Zest

Ingredients:

  • 1 Large kumara
  • Radish slices (approx. 2/3 radish, depending on size)
  • ½ cucumber, sliced
  • ¼ tsp paprika
  • Radish leaves
  • ½ cup sour cream
  • ½ tsp dried dill
  • Olive oil
  • Salt & pepper
  • Lemon (optional)

Instructions:

  1. Preheat the oven to 180 degrees Celsius
  2. Slice the kumara into ¼” slices. Drizzle olive oil on both sides and season with salt, pepper, and paprika. Place on a baking tray and bake for 20 minutes.
  3. In a bowl, combine the dried dill with sour cream. Season with salt and pepper. Set aside.
  4. Once the kumara slices are done, remove them from the oven and allow them to cool.

Assembly:

  1. Spread a generous layer of the sour cream mixture on top of each kumara slice.
  2. Add a few radish leaves on each kumara toast.
  3. Layer on the cucumber and radish slices.
  4. Drizzle olive oil over the assembled toasts.
  5. Season with salt and pepper. If available, add a squeeze of lemon from your garden.
