Crispy on the outside, fluffy on the inside! These potatoes are an easy side dish for any occasion. Serve with aioli and Parmesan for extra flavour.

Ingredients:

  • 8 potatoes
  • 10g butter
  • 40g Parmesan
  • 1 tablespoon chopped rosemary
  • Aioli

    Instructions:

    1. Wash and dry the potatoes.
    2. Cut the potatoes in half.
    3. Score the inside of the potato in a criss-cross pattern.
    4. Brush a baking tray with melted butter.
    5. Sprinkle the grated Parmesan cheese on the tray. Sprinkle the chopped rosemary on top of the Parmesan cheese.
    6. Place the scored side of the potato down on top of the Parmesan cheese.
    7. Bake in the oven for 20-25 minutes at 220 degrees until soft on the inside. Remove from the oven and allow to cool slightly before removing from the tray.
    8. Serve with aioli.
