Bright, fresh, and full of texture—this Grapefruit, Green Bean and Quinoa salad recipe brings together juicy citrus, crunchy green beans, sweet dried cranberries, and creamy feta for a perfect balance of flavours. A light honey and citrus dressing is the perfect finishing touch, to tie this simple and flavourful salad together.

If you're not convinced on grapefruit, we really think this flavour combination will change your mind! But you could easily substitute for orange instead.

Ready in just a few steps, this is the summer salad to make on a busy weeknight when you're craving something balanced and nutritious. It's a delicious side paired alongside chicken or fish, but with the quinoa, feta and almonds it also makes for a light vegetarian meal on its own.

INGREDIENTS:

  • ½ cup quinoa
  • 1 cup water
  • 150g green beans
  • 1 grapefruit, segmented (you could substitute for orange)
  • 50g dried cranberries
  • 40g chopped almonds
  • 100g feta cheese, crumbled
  • 1 large handful mixed salad greens
  • Salt & pepper, to taste

Dressing:

  • ¼ cup olive oil
  • 2 Tbsp honey
  • ½ tsp Dijon mustard
  • Juice of ½ grapefruit (you could substitute for orange)
  • Salt & pepper, to taste

INSTRUCTIONS:

  1. Cook the quinoa: Rinse the quinoa then place in a pot with 1 cup of water. Cover and bring to the boil.
  2. Reduce the heat and simmer for 15 minutes. Once all water is absorbed and the quinoa is cooked, remove the pan from heat and let sit covered for 10 minutes. Fluff quinoa with a fork.
  3. Trim the end of the green beans, then blanch in boiling water for 2-3 minutes. Transfer immediately to an ice bath to stop them cooking. Drain and pat dry with a tea towel.
  4. Make the dressing: In a jar, combine olive oil, honey, Dijon mustard, grapefruit juice, salt, and pepper. Shake well until fully mixed.
  5. To assemble: In a large bowl, combine the quinoa, green beans, grapefruit segments, cranberries and mixed greens. Drizzle over the dressing and toss to combine.
  6. Sprinkle with chopped almonds and crumbled feta, then season with salat and pepper to taste. Serve immediately and enjoy!
