This one’s for the snackers, the brunchers, and the “what can I do with all this asparagus?” crowd. These Cheesy Sesame & Asparagus Puffs are a simple way to turn your stalks into something special. Flaky pastry, nutty Parmesan, a pop of sesame - they’re quick to make, fancy to look at, and ideal for late spring lunches or last-minute picnic plates.

INGREDIENTS:

  • 1 defrosted square sheet of store-bought puff pastry
  • 8 asparagus spears
  • 100g grated Parmesan
  • 1 Tbsp mixed sesame seeds (black and white)
  • 1 egg, beaten (for egg wash)

INSTRUCTIONS:

  1. Preheat oven to 180°C and line two baking trays with baking paper.
  2. Trim the woody ends off the asparagus.
  3. Cut the puff pastry into 4 long, even strips.
  4. On the baking paper, sprinkle the Parmesan into 4 lines, roughly matching the size of each pastry strip.
  5. Place 2 asparagus spears on top of each cheese line.
  6. Lay a strip of pastry over the top and press gently to seal around the edges.
  7. Brush the tops with egg wash and sprinkle with sesame seeds.
  8. Bake for 20–25 minutes, or until golden, puffed, and crisp.
  9. Let cool slightly before serving warm.
