If you're on the fence about Brussels sprouts, this easy and delicious salad recipe will turn you into a sprouts superfan.

For this Baked Brussels Sprout and Apple Salad, the sprouts are finely shaved or sliced, creating a slaw-like texture—almost like using shredded cabbage—and then softened through the baking process. We've used the purple Brussels sprouts that have been debuting in Wonky Boxes recently, but you can use the staple green Brussels too.

And the sprouts aren't the only thing to love about this weeknight-friendly side dish. The tangy, lemony flavour of the salad dressing pairs perfectly with the sweet apple slices, making this salad one that will brighten your taste buds.

INGREDIENTS:

  • 6-8 Brussels sprouts
  • 1 apple
  • 1/3 cup grated Parmesan
  • 1/4 cup chopped parsley
  • 1/4 cup shaved almonds
  • Salt & pepper

DRESSING:

  • 1 Tbsp maple syrup
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • Juice of half a lemon
  • 1 garlic clove, minced
  • 2 Tbsp mayo

INSTRUCTIONS:

  1. Preheat oven to 180°C
  2. Rinse, then julienne or very thinly slice the Brussels sprouts. Put into a baking tray and season with olive oil, salt and pepper before baking for 10 minutes.
  3. While the sprouts are baking, make the dressing. In a bowl mix together the maple syrup, Dijon mustard, apple cider vinegar, lemon, garlic, and mayonnaise.
  4. Once the sprouts are finished, pour into a bowl and toss them in the salad dressing along with the grated parmesan, parsley and almonds.
  5. Thinly slice the apples into rounds and arrange them in a flat layer on a serving dish. Top with the Brussels salad.
