There is one word to describe this salad - refreshing! Featuring crisp asparagus, colourful capsicum, and the crunch of kohlrabi, brought together by a zesty sesame orange dressing. If you don't have all the veggies in the recipe, consider substituting them with alternatives like green beans, peas, cucumber, zucchini, and grated carrots, ensuring a similar crisp texture.

Ingredients:

  • 1 capsicum
  • 1 bunch asparagus
  • 1 medium-sized kohlrabi or two small ones
  • Zest of one orange
Dressing:
  • Juice of one orange
  • ½ tablespoon honey
  • 1 tablespoon vinegar
  • ½ tablespoon olive oil
  • ½ tablespoon sesame oil
  • Salt & pepper

Instructions:

  1. Slice the kohlrabi into rounds and then halve them.
  2. Remove the woody ends from the asparagus and chop them into thin, long slices.
  3. Thinly slice the capsicum.
  4. Grate the orange zest.
To make the dressing:

Combine all the ingredients listed above in a bowl.

To assemble the salad:
  1. Mix all the ingredients together in a bowl.
  2. Season with salt and pepper.
  3. Garnish with 1 tablespoon toasted sesame seeds.
