Enjoy Wonky's fruity, warming twist on a classic bakery favourite - the almond croissant. These Apple Pie Almond Croissants are packed with the traditional almond frangipane filling, but taken to the next level with a oooey gooey spiced apple mixture that will make you think of your favourite apple tart. It's all the joy of eating two sweet treats, merged into one!

Using pre-made, plain croissants makes this recipe super easy, and it's a great one to try with the kids for a special school holidays sweet treat! We recommend using croissants a day or two past their prime, so keep this one up your sleeve to give any forgotten pastries a second lease on life.

These Apple Pie Almond Croissants look just as good as they taste with the decadent swizzle of frangipane and sprinkling of almond on top, so if you want to impress guests with less fuss in the kitchen, this recipe is the apple of your eye.

INGREDIENTS:

  • 4 leftover croissants

FOR THE GLAZE:

  • 100ml water
  • 1 Tbsp sugar
  • 1 tsp vanilla extract

ALMOND FRANGIPANE FILLING:

  • 100g almond flour
  • 70g butter, softened
  • 100g caster sugar
  • Pinch of salt
  • 1 egg
  • ½ tsp almond extract

APPLE PIE FILLING:

  • 3 Granny Smith apples, diced
  • 40g butter
  • 40g sugar
  • 2 Tbsp maple syrup
  • ¼ tsp cinnamon
  • ¼ tsp allspice

GARNISH:

  • 2 Tbsp sliced almonds
  • Icing sugar for dusting 

INSTRUCTIONS:

  1. Make the Glaze: In a pot, combine water, sugar, and vanilla. Cook on low heat for 10 minutes, then remove from heat and let cool.
  2. Prepare the Almond Frangipane Filling: Add filling ingredients to a bowl and use an electric beater/mixer to beat ingredients until well combined and fluffy.
  3. Prepare the Apple Pie Filling: Add the apples, butter, sugar, maple syrup, and spices to a frying pan. Cover and cook on medium-low heat for 7-8 minutes, stirring the pot every few minutes to ensure the apples do not stick. Set aside to cool.
  4. Assemble the Croissants:
    • Preheat the oven to 180°C. 
    • Slice the croissants in half and place the bottom halves on a lined baking tray.
    • Brush the glaze over the inside of the croissant halves then spread or pipe the frangipane filling onto the bottom halves, reserving some for the top of the croissants (this will help stick the sliced almonds on top)
    • Add a scoop of the apple pie filling on top of the frangipane
    • Glaze the inside of the top half of each croissant, then place the top half back on, to cover the fillings.
    • Brush the tops with glaze.
    • Spread the remaining frangipane over the tops and sprinkle with sliced almonds.
  5. Bake the croissants in preheated oven for 17 minutes.
  6. Let the croissants cool, then dust with icing sugar before serving. Enjoy!
